A Summer Dinner Party Menu

This is a menu for the dog days of August, inspired by the swollen ripeness of late summer's 'vegetable fruits' - a glorious name for the likes of aubergines, peppers, courgettes and tomatoes. There's a bit of sheeps' cheese, some cured fish and simply cooked meat, plenty of vivid herbs and bright flavours, plus a couple of puds designed to bring edible air conditioning to a sweltering afternoon. You can cook the meat on a barbecue if you happen to be firing it up. I've given you rough timings, though much will depend on the heat of your coals. All recipes serve 6
